Comapêche is on a mission to save Britain from bad crabsticks. Instead it wants us to eat a more sophisticated product made from surimi, an Asian white fish product that is pulverised to become rubbery. The company fishes in the North Atlantic using the only factory ship in Europe equipped to produce surimi base. One quarter of its output is exported - Spain, Italy and North Africa are big markets, but not the UK, where it faces tough competition from low-cost Asia lines. Comapêche is looking for new ways to market its products to the UK, developing a surimi base with no artificial additives and an organic product. "Crabsticks are a healthy option - low in fat and high in protein," says a spokeswoman. "We have to help people to know how to use surimi in recipes."
