Sir: Perhaps the quote from Ben Tish in ‘What turns on top chefs,’ (15 June) would better be rephrased as “Maldon Sea Salt is the best-looking salt” rather than “the healthiest salt”. The percentage of sodium chloride across the range of edible salts in UK supermarkets is broadly the same.
