Sir, The statistics around food waste in the QSR sector (‘A supersize waste?’) are shocking and it’s disappointing to see that Starbucks, Costa and Burger King have not signed up to Wrap’s Hospitality and Food Service Agreement, especially in light of the recommendations also made in the government’s Efra food waste report. However, Michael Gove’s appointment as Defra secretary presents us with an opportunity to campaign for further positive change and address the escalating volumes of avoidable food waste. Reducing overall volumes, while implementing the most sustainable and environmentally beneficial method in recycling, is imperative for our environment.
