Marks and Spencer is experimenting with wheel-in convenience solutions in its foodhalls now they are proving popular in its Simply Food c-stores. M&S started to introduce modular in-store bakeoffs on wheels in its key stores in September and now has 29 in operation. It plans to have a total of 80 by Christmas and a further 40 in the new year. A spokeswoman said: "The format brings customers bread and patisserie products baked in store every day. The trial will be evaluated when we get up to 120 sites, and we will decide what other modules to add to and which other stores to extend to." The bakeoff is a modular unit on wheels, which can be installed in four hours. Project manager for bakery Amanda Paxton said: "The scheme is compact and versatile and can service any size and type of store in our Food chain, even our new smaller format Simply Food stores." A spokeswoman said: "It is too early to comment on future additions to the convenience offer like rotisseries." {{NEWS }}
