Demand more selective
Demographics are against lamb, yet the strength of demand among the older consumers who buy it is demonstrated by the 21% year on year volume gain and 17% value increase in roasting leg purchases recorded by Taylor Nelson Sofres for the four weeks to April 4.
Smaller but significant rises were also seen over 12 and 52 weeks.
These sales performances have been better than for roasting pork, despite lamb's much higher price. And unlike pork, lamb leg was no cheaper in March than a year previously.
However, the demand for lamb appears to have become more selective. Whereas pork steak and shoulder sales rose even more strongly than leg purchases, in lamb shoulder roasts, chops, stewing cuts and mince were mostly declining throughout the year in both volume and value.
