There is a significant qualitative shift which MLC has illuminated: the proportion of bacon consumed out of the home has risen from a quarter in 1990 to just over a third by the end of the decade.
An 80% penetration of bacon in staff catering two thirds of the cost sector usage (canteens), where bacon is more strongly entrenched means that cooked all day breakfasts are the most popular workplace fare.
It also means that the high margin opportunities for bacon that the profit catering sector would generate are eluding the bacon trade.
