This year has seen a slow start in milk deliveries to dairies. Provisional MAFF figures show a year on year drop of availability of nearly 40 million litres in January and nearly 30 million litres in February.
This has been affecting both butter and cheese production: the effect is immediately visible in butter, but will take longer to come thorugh in cheese.
The Republic of Ireland, too, has seen lower milk supplies by nearly 20%, which is likely to affect cheese output, especially mild Cheddar.
