Japanese food brand Yutaka has launched a sashimi-grade salmon for UK supermarkets, in a bid to demystify Japanese food.
Yutaka has partnered with salmon expert Bömlo to launch Yutaka Sashimi Salmon (rsp: £12/160g) which uses fresh salmon from Norway.
The salmon for the product is kept at a low temperature in a Norwegian fjord next to Bömlo’s factory, which minimises stress on the fish to ensure a softer texture to the meat.
The salmon is killed using a Japanese technique called ikejime to be as humane as possible. Each fish is then filleted within two hours after harvest with a technique called pre-rigor – a method that preserves freshness. It is then frozen immediately.
The frozen sashimi salmon can be kept for months in a home freezer and, once defrosted, can be eaten raw and used in sushi and sashimi dishes.
“We have partnered with salmon specialist Bömlo to launch our Yutaka Sashimi Salmon, which enables consumers to have an authentic sushi or sashimi experience at home, straight from the freezer,” said Ken Furukawa, CEO of Yutaka owner Tazaki Foods.
“This frozen format also makes it more convenient for supermarkets to store and sell sashimi-grade salmon to their shoppers.”
Yutaka said it was in talks with retailers to get products on shelves so “consumers can experience the true taste of Japanese sushi at home”. It is currently available to buy via the Yutaka website and through online Asian supermarket Starry Mart.
The sashimi salmon product joins Yutaka’s range of around 100 Japanese products available in the UK, including sushi rice, sushi nori, wasabi paste, sushi ginger and sesame.
