The number of households buying shallots has more than doubled in the past two years, according to a survey by UKShallot.com, the British industry’s marketing body.
It claims that the variety is fast gaining ground on onions, thanks to its use by celebrity chefs. It says £5m worth of shallots per year are being eaten in the UK with the British crop now available.
UKShallot.com chairman Paul Cripsey said: “Consumer appreciation of different varieties of alliums is increasing. The popularity of the
shallot with celebrity chefs has pushed it into the mainstream.”
Cripsey said there was still great potential for growth, given that the French consume ten times more shallots than Brits.
Michelin-starred French chef Raymond Blanc said: “Shallots are unique, incredible and probably one of the most used vegetables in French cuisine.”
