A UK company has created a lactose-free olive oil that tastes of butter.
Isabelina Trading Company said Isabelina Gold (rsp: £7.95/250ml) offered the natural flavour of butter with “a fraction” of the satfat and was suitable as a replacement for butter or ghee in baking or frying. Produced in partnership with a Spanish olive oil supplier, it is made in small batches by removing flavour molecules from lactose-free butter and adding them to extra virgin olive oil.
Isabelina Trading Company is targeting Gold at the gourmet and independent market but is hoping to increase production and is talks with investors to boost its marketing reach. The Sunderland business is also developing an olive ‘juice’ made from the seeds or kernels of olive stones, and a protein-rich ‘olive flour’.
