Princes claims the most streamlined tuna production process in the world in Mauritius thanks to an integrated, computer controlled, thaw, cook and cool system’ which it has developed in conjunction with a Danish equipment producer. It claims that, while its global competitors put their tuna through three separate processes, lasting up to 20 hours, its method at Port Louis can mean the time taken to pack the fish is reduced to just over one third of that time. And Mauritius md Nick Spruyt argues this results in improved quality product with better consistency and texture. The cannery also breaks new ground on the environmentally friendly front, given that Princes has developed production systems which mean the plant’s water consumption is reduced to just 25% of the global fish canning industry norm.
