Alternatives to meat alternatives. That’s where demand for plant-based eating has reached for Co-op’s customers, leading its development chefs to create a mushroom-upon-mushroom duxelle wellington as one of the standouts of its festive range, which the retailer describes as “a vegan alternative to turkey and faux meat”.
The Co-op is predicting a late surge in Christmas food shopping as a result of the World Cup taking place in November through December.
“As a convenience retailer, we expect demand for party food and game night snacks to be at an all-time high during November and December, so we will be well stocked in preparation,” it says.
