Champion: Zenb Noodles
The humble pea has turned into quite the hero ingredient in recent years, finding its way into a plethora of plant-based alternatives. Here it’s used by Zenb to create a single-ingredient noodle.
Using yellow peas – which are more resilient and more sustainable than wheat, says the brand – the team spent 18 months creating a confidential technology that uses both the skin and core and turns it into a noodle with 14g of fibre per 100g, an increase of 700% compared with wheat-based noodles. It’s also gluten-free, high in protein, a source of iron, high in potassium and high in phosphorous – an awfully big achievement with a single ingredient. It isn’t just high in nutrients either – our judges also said it tasted great and couldn’t be distinguished from egg noodles.
